Artichoke Dip
- 2 tbsp. olive oil
- 1 md. onion
- 2 garlic cloves
- 1 cup bread crumbs (I use pre-seasoned Italian bread crumbs)
- 1 container mixed shredded cheese Romano, Parmesean, Asiago
- 1 square pkg. cream cheese
- 1 cup mayonnaise
- 1 can quartered artichoke hearts (cut up)
- Preheat oven to 400 degrees.
- Saute the onion and garlic in olive oil.
- Mix onion, garlic, mayo, and cream cheese in a bowl.
- Mix in artichoke hearts and 3/4 of the bread crumbs and mixed cheeses.
- Spread out in the bottom of container, then top with remainder of breadcrumbs and then the rest of the mixed cheese.
- Bake for 30 minutes, or until top is browning and middle is melted.
- Serve with veggies, fresh or toasted bread, or crackers (Triscuits and Ritz are crowd faves).
