Latin Stir-fry

  1. Put rice in a pot on the stove with the water and bring to a boil.
  2. Once it is boiling, turn burner to low, cover pot, and cook 20 minutes or until water is evaporated.
  3. While rice is cooking, prepare the stir fry.
  4. Chop your veggies into bite-sized pieces.
  5. (Chop your cilantro for the rice, too.)
  6. Remove the white membranes and seeds from your peppers.
  7. Grill vegetables on medium-high heat or on a grill, until you reach desired char-ness.
  8. (15-20 minutes is about where I stop.)
  9. Season chicken as desired, then cook/grill until the meat turns white.
  10. Cut into bite-sized pieces.
  11. When your rice is cooked, add cilantro and lime juice.
  12. Stir to mix, then put 1 cup rice on each plate.
  13. Top with veggies and chicken.
