Baked Greek Fish
- 4 whole Tilapia Fillets
- 2 Tablespoons Extra Virgin Olive Oil
- 2 whole Lemons
- 1/2 teaspoons Dried Oregano
- 1 whole Large Tomato, Diced
- 1/4 whole Red Onion, Thinly Sliced
- 1 whole Yellow Bell Pepper, 1/2" Sliced
- Salt And Pepper, to taste
- 1/4 cups Feta Cheese
- Preheat oven to 350 degrees F.
- Cut four 12 panels of aluminum foil.
- Lay a tilapia fillet on each panel.
- Drizzle 1/2 a teaspoon of oil on each, followed by the juice of half a lemon and a sprinkling of dried oregano.
- Chop vegetables accordingly and divide amongst each fillet.
- Salt and pepper to taste (but go light on the salt, because of the salty feta).
- Enclose each fish in its own foil packet.
- Bake for 15 minutes.
- Once cooked through, top with feta cheese.
