Baked Greek Fish

  1. Preheat oven to 350 degrees F.
  2. Cut four 12 panels of aluminum foil.
  3. Lay a tilapia fillet on each panel.
  4. Drizzle 1/2 a teaspoon of oil on each, followed by the juice of half a lemon and a sprinkling of dried oregano.
  5. Chop vegetables accordingly and divide amongst each fillet.
  6. Salt and pepper to taste (but go light on the salt, because of the salty feta).
  7. Enclose each fish in its own foil packet.
  8. Bake for 15 minutes.
  9. Once cooked through, top with feta cheese.
