Peach Salsa
- 2 cups Diced Fresh Peaches, Leave Skin On
- 1/4 cups Red Bell Pepper, Finely Diced
- 1/4 cups Shallot, Finely Chopped
- 2 Tablespoons Fresh Lemon Or Lime Juice
- 1 pinch Vanilla Salt (regular Salt Is Fine)
- 1 teaspoon Vanilla Sugar (regular Sugar Is Okay)
- Chopped Fresh Cilantro, To Taste
- Cut up all your fruit and veggies.
- Measure out all your ingredients.
- Pop everything but the cilantro into a bowl and mix it all up.
- Pop it in the fridge for about 30 to 60 minutes to let the flavours meld together.
- Remove from fridge and garnish with cilantro.
- Serve over top of fish, chicken, pork or beef.
- You can also use it as a dip for chips if desired.
