Peanut Butter Granola

  1. Preheat oven to 300 degrees F.
  2. In a medium saucepan over medium heat, add the wet ingredients.
  3. Stir well.
  4. Bring to a boil and then simmer on low for 5-10 minutes, stirring frequently.
  5. In a very large mixing bowl, mix together the dry ingredients.
  6. Add the wet mixture, while its still warm, on top of the dry mixture and stir well.
  7. It will be very thick and hard to stir, but keep at it until everything is thoroughly combined.
  8. Spread onto a baking sheet lined with parchment paper or a nonstick mat and bake in the oven for 30 minutes.
  9. Remove the pan from the oven and give the granola a good stir to ensure even baking.
  10. Place back in the oven and bake for more 15 minutes.
  11. Allow to cool for 20-25 minutes on the pan before serving (I just turn off the oven and open the oven door and let it sit in there till Im ready to put it away).
  12. The granola will stiffen up as it cools.
  13. Enjoy!
  14. Makes 10 cups.
  15. Serving size is 1/2 cup.
