Bruschetta With Favas And Guanciale ... Recipe
- 3/4 lb fava beans peeled
- 1/4 lb guanciale minced (substitute pancetta or possibly smoked bacon)
- 2 x artichokes cleaned, trimmed, and cut into thin slices
- 1 x onion minced
- 1 c. extra-virgin extra virgin olive oil
- 3 x potatoes peeled, and sliced thinly Salt to taste Freshly-grnd black pepper to taste
- 6 slc crusty peasant bread
- In a large skillet, combine the fava beans, guanciale, artichokes, and onion, drizzle with the extra virgin olive oil and cook over a medium-high flame, stirring regularly, till the ingredients are softened and browned, about 10 min.
- Season with salt and pepper and add in 1/2 c. water.
- Continue cooking for another 5 min, then add in the sliced potatoes, adjust the seasoning, cook for an additional 2 min, and remove from the heat.
- Preheat the grill or possibly broiler.
- Grill each slice of bread till it is golden on both sides and top each with some of the vegetable mix.
- Serve while warm.
- This recipe yields 6 servings.
