Plump Apricot Porridge

  1. Pour boiling water over apricots and allow to stand for 20 minutes until plump.
  2. Combine the oats and water in a microwave safe bowl, and cook on High power for 1 1/2 minutes, mix well, and cook a further 1-2 minutes.
  3. Spoon porridge between serving bowl, pour over milk, top with apricots and Philly*.
