Tomato Sauce - Simple and Quick!
- 3 tablespoons olive oil
- 2 medium onions, peeled, chopped into large chunks and finely chopped in a food processor
- 14 teaspoon hot red pepper flakes
- 14 teaspoon sugar
- salt and pepper
- 6 garlic cloves, finely hand chopped
- 2 (28 ounce) cansplum tomatoes with juice, pureed in a blender
- 1 bay leaf
- 13 cup fresh basil, chopped (or fresh oregano)
- salt and pepper
- Heat a medium sized heavy bottomed pot to medium and warm the olive oil.
- Add the chopped onions, hot pepper flakes, sugar, salt and pepper and cook until soft, about 15 minutes - a little bit of brown is O.K.
- It adds some flavor!
- Add the garlic, stir and cook for three minutes.
- Taste the tomatoes to determine how much salt you want to add.
- Add the pureed tomatoes, bay leaf, salt and pepper.
- Bring to a boil, drop to a simmer and cook for 30 minutes.
- Remove from the heat.
- Add the chopped basil or oregano and stir.
- Let sit for about 5 minutes.
- Enjoy with what ever dish you are making!
