Cheesy Potato Chowder

  1. Cut potatoes into 1 inch cubes and boil until soft.
  2. Strain the potatoes.
  3. Keep 1 cup out, and return the rest to the pot.
  4. Mash the 1 cup of potato cubes, and return to the pot.
  5. Stir in the broth, salt and pepper.
  6. Bring to a boil.
  7. Add the broccoil (or other veggies) and boil for 4 minutes.
  8. Whisk the flour and milk in a separate bowl.
  9. Add this to the soup mix.
  10. Cook over medium heat until it thickens.
  11. Stir in the sour cream and shredded cheese.
