Lemon Zucchini

  1. Boil and slice zucchini.
  2. Drain well.
  3. Cook shallots and butter on low heat.
  4. When shallots are tender, add lemon peel and juice to pan.
  5. Cook slowly for 2 minutes.
  6. Add zucchini to pan and mix well.
  7. Cook until all is heated.
