Pomegranate Mojito With Vanilla Sugar

  1. Rim cocktail glass with vanilla Sugar.
  2. Combine all ingredients except mint in a cocktail shaker and shake well.
  3. Muddle the mint in the bottom of a cocktail glass.
  4. Add Ice, optional.
  5. Strain mixture into the glass with the mulled mint, and serve.
  6. In a large container or glass jar with an airtight lid, pour 1/2 of the sugar.
  7. Add bean quarters and cover with remaining sugar.
  8. Seal and place in a cool, dark place.
  9. Two or more times a day, shake the container to distribute the vanilla essence.
  10. Shake daily for at least 1 week and up to 3 weeks.
  11. Replenish the sugar as it is used.
