Spicy Crab Cakes
- 3 cups KRAFT MAYO Real Mayonnaise
- 1/3 cup lime juice Safeway 3 ct For $1.00 thru 02/09
- 1 Tbsp. ground red pepper
- 3 qt. Canned fresh crabmeat, drained, flaked
- 1-1/2 qt. Unseasoned dry bread crumbs, divided
- 2 cups pimentos, drained, diced
- 3/4 cup green onions, sliced
- 3/4 cup butter
- Mix mayonnaise, lime juice and red pepper.
- Add crabmeat, 3 cups of the bread crumbs (or 1/2 cup for trial recipe), pimientos and onion; mix lightly.
- Shape 1/2 cup of the crabmeat mixture into 1/2-inch-thick patty.
- Repeat with remaining crabmeat mixture.
- Coat with remaining 3 cups bread crumbs (or 1/2 cup for trial recipe).
- Cook patties in butter on medium heat 3 minutes on each side or until heated through and golden brown on both sides.
