Frittata
- 2 tsp cooking oil (I used coconut)
- 1 cup chopped mushrooms
- 1 cup chopped artichokes (from the jar)
- 2 tsp chopped sun dried tomatoes
- 6 eggs
- 1/4 cup cream/milk
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley flakes
- 2 slice pepper jack cheese
- 2 tbsp bread crumbs
- Preheat broiler to low heat.
- Heat oil in an oven-proof pan.
- Cook vegetables on stove over medium heat.
- Whisk eggs, cream/milk, salt, pepper, garlic powder, and parsley flakes.
- Add mixture to pan.
- Make sure vegetables are evenly distributed in eggs but after that don't touch it and let it cook over medium heat until eggs start to settle.
- When eggs are starting to visibly be cooked on top (forming a solid top coat) but still a little runny, add cheese and let it cook another minute.
- Add bread crumbs and put in broiler for 5 minutes or until top starts to brown.
- Remove pan from oven and let sit for a couple minutes before taking frittata out of the pan.
