Havarti Melted Cheese Sandwiches With Avocado

  1. Heat a large non-stick skillet over medium-high heat.
  2. Butter 4 bread slices on one side only.
  3. Put the slices, buttered side down on a clean plate.
  4. Spread the fig preserves in a thin layer on EACH side of the bread slices.
  5. Top with the Havarti chesse.
  6. Immediately after slicing up the avocado, drizzle with lemon juice to stop browning.
  7. Place a layer of avocado slices on the bread.
  8. Garnish with a few mint leaves and black pepper.
  9. Put the other slice of bread on top.
  10. Butter the tops.
  11. Place 2 sandwiches in the pan and cook until golden brown and the Havarti cheese has started to melt, about 2-3 minutes.
  12. Flip the sandwiches over and lightly press down with a spatula.
  13. Cook the other side until brown.
  14. Transfer to warming plate and cook the other two sandwiches.
  15. Serve hot.
  16. Really delicious served with slices of tart green apples!
