Blueberry-Cherry Oatmeal Crisp
- 13 cup whole-wheat flour
- 3 Tbs. sugar
- 1/2 tsp. baking powder
- 3 Tbs. Earth Balance vegan buttery sticks, melted and cooled
- 23 cup quick-cooking rolled oats
- 2 Tbs. sliced almonds
- 2 pt. blueberries (4 cups)
- 1/2 lb. pitted, halved fresh cherries (1 cup)
- 13 cup sugar
- 1/4 cup fresh orange juice
- 2 Tbs. cornstarch
- 1 Tbs. grated orange zest
- 1/4 tsp. ground cardamom
- 18 tsp. salt
- 1 pinch freshly ground black pepper
- Preheat oven to 375F.
- To make Topping: Whisk together flour, sugar, and baking powder in small bowl.
- Mix in melted vegan margarine until clumps form.
- Stir in oats and almonds; set aside.
- To make Filling: Combine all ingredients in large bowl; transfer to 8-inch square cake pan or baking dish.
- Cover Filling with Topping, and lightly spray with cooking spray.
- Bake 35 minutes, or until Topping is golden brown and Filling slowly bubbles.
