Easy Eggplant & Green Bell Pepper Ponzu Sauce Stir-Fry

  1. Prepare 2 tablespoons of ponzu sauce
  2. Add 1/2 teaspoon grated ginger (tube type is fine).
  3. Blend evenly.
  4. Stir-fry bite-sized bits of eggplant in the frying pan.
  5. After heating slightly, add the sliced bell peppers.
  6. After the eggplant and peppers are thoroughly cooked, remove from the heat and add the ginger and ponzu sauce mixture.
  7. Blend briskly, then sprinkle with bonito flakes--as much as you like.
  8. Lightly toss and transfer to serving dish.
