leek bacon and potato soup
- 25 grams butter
- 6 slice rashers of streaky bacon
- 400 grams trimmed leeks
- 3 medium potatos
- 1 single cream to serve
- 1 onion
- 1 liter 1.4 litres of stock
- melt butter in a large pot add diced onion and 3 rashers diced cook for about 5mins
- add leeks and potato and sweat for 5mins
- add stock and simmer for 30-40mins
- wizz with a hand blender till smooth season and add cream.
- i grill the remaining rashers till really crispy then crumble them and sprinkle over too
