Aruban Island Cooler

  1. In blender or food processor, puree pineapple, cantaloupe and papaya until smooth.
  2. With motor running, add apricot nectar, 1 cup pineapple juice and water.
  3. Transfer to pitcher.
  4. Season with lime juice, if desired.
  5. Add remaining pineapple juice to desired consistency or you can add more sparkling water if desired.
  6. Pour into glasses filled about halfway up with crushed ice.
  7. Garnish with fresh mint leaves if you like.
