Blueberry Breakfast Cake Recipe

  1. Directions: In a large bowl, combine the flour, sugar, cinnamon, nutmeg, salt and butter.
  2. Cut the butter into mix.
  3. Remove 1 c. of this mix and add in 2 Tablespoons butter to create the streusel topping and set aside.
  4. To the remaining flour mix, add in the baking pwdr and baking soda.
  5. Using a hand mixer, add in the buttermilk, Large eggs, apple butter and vanilla.
  6. Combine till well blended.
  7. Spray a 13 x 9 baking dish with cooking spray and pour in the batter.
  8. Top with the blueberries and sprinkle the streusel mix on top.
  9. Bake at 350 degrees for 50 min till a toothpick comes out clean.
  10. Let cold and serve.
