Best Apple Cranberry Nut Muffins Recipe
- 2 c. apples peeled, shredded
- 1 1/3 c. sugar
- 1 c. cranberries minced
- 1 c. carrots shredded
- 1 c. black walnuts minced
- 2 1/2 c. all-purpose flour
- 1 Tbsp. double-acting baking pwdr
- 2 tsp baking soda
- 1/2 tsp salt
- 2 tsp grnd cinnamon
- 2 x Large eggs beaten
- 1/2 c. vegetable oil
- In a large mixing bowl, combine apples and sugar.
- Gently mix in minced cranberries, carrots, and nuts.
- Combine dry ingredients; add in to mixing bowl.
- Mix well to moisten dry ingredients.
- Combine Large eggs and oil; stir into apple mix.
- Fill 18 greased muffin tins 2/3 full.
- Bake at 375 degrees for 20-25 min.
- Cold 5 min beforeremoving from pans.
- Yield: 18 muffins
