Baked Sweet Potato Pineapple

  1. Cook sweet potatoes in boiling salted water for 30 to 40 minutes or until tender; drain and peel.
  2. Beat potatoes and butter until fluffy.
  3. Beat in eggs, orange peel, and 3/4 teaspoons salt.
  4. Stir in pineapple.
  5. Turn in 1 quart casserole.
  6. Cover and bake in 325 oven about 45 minutes or until heated through.
  7. Garnish with orange slices.
