Baked Sweet Potato Pineapple
- 6 medium sweet potatoes
- 14 cup butter
- 2 eggs
- 2 teaspoons finely grated orange peel (optional)
- 1 (8 1/4 ounce) can pineapple chunks, drained
- orange slice (optional)
- Cook sweet potatoes in boiling salted water for 30 to 40 minutes or until tender; drain and peel.
- Beat potatoes and butter until fluffy.
- Beat in eggs, orange peel, and 3/4 teaspoons salt.
- Stir in pineapple.
- Turn in 1 quart casserole.
- Cover and bake in 325 oven about 45 minutes or until heated through.
- Garnish with orange slices.
