Martina's Red Lentil Salad

  1. Place the lentils, barley, and chickpeas in a large bowl with enough water to cover generously and soak overnight.
  2. Drain and transfer to a large salad bowl.
  3. Add the tomatoes, pea pods, and cilantro.
  4. Add the oil, salt, and pepper and toss.
  5. (You can add other raw vegetables as desired.
  6. I like sun-dried tomatoes, corn, avocado, and baby corn.)
