Beef and Vegetable Stir Fry

  1. Prepare marinade, mixing vinegar, soy sauce, sugar, and ginger.
  2. Marinate meat in mixture while preparing vegetables.
  3. Heat 1 tablespoon oil in large skillet or wok.
  4. Stir-fry onions and mushrooms for 3 minutes over medium-high heat.
  5. Add celery and cook 1 more minute.
  6. Add remaining vegetables and cook 2 minutes or until green pepper is tender crisp.
  7. Transfer vegetables to warm bowl.
  8. Add remaining 1 tablespoon oil to skillet.
  9. Stir-fry meat in oil about 2 minutes or until meat loses its pink color.
  10. Blend cornstarch and water.
  11. Stir into meat.
  12. Cook and stir until thickened.
  13. Return vegetables to skillet; stir gently and serve.
