Chicken 'n Peppers Pasta Skillet
- 2 cups multi-grain penne pasta, uncooked
- 1 lb. (450 g) boneless skinless chicken breasts, cut into bite-size pieces
- 1 large green pepper, cut into short thin strips
- 1 large red pepper, cut into short thin strips
- 1 small onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cups Classico di Napoli Tomato & Basil Pasta Sauce
- 1 cup Cracker Barrel Shredded Part Skim Mozzarella Cheese
- 2 Tbsp. Kraft 100% Parmesan Light Grated Cheese
- Cook pasta as directed on package.
- Meanwhile, heat large nonstick skillet sprayed with cooking spray on medium-high heat.
- Add chicken; cook and stir 2 min.
- Add vegetables; cook 6 to 8 min.
- or until chicken is done and vegetables are crisp-tender, stirring occasionally.
- Drain pasta.
- Add to chicken mixture along with sauce; cook 5 min.
- or until heated through, stirring occasionally.
- Top with mozzarella; cover.
- Remove from heat.
- Let stand 1 to 2 min.
- or until cheese is melted; top with Parmesan.
