Blue Corn Feta Taquitos

  1. In a medium bowl place first 7 ingredients up to lemon juice.
  2. Stir until combined.
  3. Set aside.
  4. In a medium saute pan place 1/4 cup oil and heat to medium hot.
  5. Fry each tortilla for 15 seconds, or until softened.
  6. Drain on paper towels or paper bags.
  7. In a large, heavy pan place 4 cups of oil and heat over high heat until very hot.
  8. Loosely roll each tortilla and deep-fry it for 1-2 minutes, or until crisp.
  9. Drain on paper towels or paper bags.
  10. Stuff reserved vegetable mixture inside each tortilla.
  11. Cut the taquitos in half, crosswise.
