Watermelon Sorbet
- 1/3 cup sugar
- 1/4 cup water
- 1/3 cup light corn syrup
- 2 cup pureed watermelon
- 1 tbsp lemon juice
- Combine sugar, water and syrup in a sauce pan and stir until it boils.
- Reduce heat and simmer for 5 minutes.
- Let cool in the refigerator.
- Cut up watermelon, discarding the seeds.
- Puree in a food processor.
- Measure and add 3 cups of watermelon an lemon to the cold sugar, water and syrup mixture.
- Pour into ice cream maker for 20 -30 minutes.
