Appling High School Brunswick Stew, Baxley, Georgia Recipe
- 5 x Hog heads
- 5 lb Grnd beef
- 2 gal Ketchup
- 2 1/2 gal Tomatoes Red pepper to taste
- 25 x Hens
- 50 lb Irish potatoes
- 30 x Onions
- 20 x Lemons
- 1 x 1 Gallon who kernel corn
- The day before needed; boil hog heads and hens in separate containers.
- When tender grind hog heads and remove bones from hens.
- In a 50 gallon pot brown grnd beef and minced onions.
- Add in grnd hog heads and hens which have been cut up into small pcs.
- Add in catsup, lemons and red pepper to taste.
- Simmer for 1 to 2 hrs.
- Add in diced potatoes, tomatoes, whole kernel corn.
- Simmer till mix is well blended.
- About 1 hour
