Beer-Braised Papaya and Pepper Fajitas

  1. Heat olive oil and red pepper flakes in nonstick skillet over medium-high heat.
  2. Add onion, bell pepper, garlic and papaya, and cook 7 minutes, or until papaya and vegetables are soft, stirring frequently.
  3. Stir in salt, pepper, cumin, chili powder and Old Bay Seasoning.
  4. Cook over medium-high heat 2 to 3 minutes, stirring frequently.
  5. Add beer.
  6. Cook 5 minutes, or until liquid has evaporated, stirring occasionally.
  7. Remove from heat, and fold in cilantro.
  8. Heat tortillas in a dry skillet, 15 to 20 seconds per side.
  9. Divide filling among warmed tortillas, fold, and serve hot.
