Double Fudge Banana Muffins

  1. Preheat oven to 350 degrees F. Grease muffin tin or place papers in tin.
  2. Whisk together the egg, sugar, applesauce, vanilla, and bananas.
  3. Mix the dry ingredients and add to the wet.
  4. Mix just until combined.
  5. Add some chocolate chips if you want.
  6. Bake for about 20-25 minutes for regular muffins or 25-30 minutes for big muffins (I just cooked them until a toothpick came out just a little sticky because I wanted them to be "brownie-ish).
