Italian Style Vegetable Beef Soup
- 1 pound Stew Meat
- 1 Tablespoon Olive Oil
- 2 cups Sliced Carrots
- 1 cup Red Bell Pepper, Chopped, Or Green If You Like
- 8 ounces, weight Mushrooms, Sliced
- 1 whole Zucchini, Sliced
- 1 cup Fresh Green Beans, Cut Into 1" Lengths
- 4 whole Leeks, Chopped
- 2 cups Celery, Chopped
- 14 ounces, fluid Can Tomatoes Diced With Juice
- 1/2 teaspoons Salt
- 1/2 teaspoons Black Pepper
- 2 whole Bay Leaves
- 1/4 teaspoons Thyme
- 29 ounces, fluid Beef Broth, Low-sodium
- Brown meat in a skillet with olive oil.
- Place meat in your slow cooker along with any juices.
- Add your vegetables, all seasonings, and broth to the pot.
- Cover and cook on high for 4 hours, or on low for 8 hours.
- Enjoy with crusty Italian bread!
