Chicken-Noodle Frittata

  1. Break the 2 minute noodles into 3cm pieces.
  2. Place in a heatproof bowl.
  3. Add the flavour sachet from the packet and frozen peas.
  4. Cover with boiling water and set aside for 2 minutes or until tender.
  5. Drain.
  6. Preheat grill on medium.
  7. Heat olive oil in a 20cm (base measurement) non-stick frying pan over medium heat.
  8. Add the noodle mixture to the pan.
  9. Pour over eggs, lightly whisked.
  10. Cook for 3 minutes or until set around the edge but still runny in the centre.
  11. Place the pan under the grill and cook for 3 minutes or until set.
  12. Cut into quarters to serve.
