Old Fashioned No-Fat Apple Cake
- 2 1/2 cups flour, all-purpose
- 1 cup sugar
- 1 teaspoon baking soda
- 2 1/4 teaspoons cinnamon
- 1/4 teaspoon nutmeg ground
- 18 teaspoon mace
- 1 each eggs
- 2 each egg whites
- 1 teaspoon vanilla extract
- 1/2 cup applesauce
- 1/2 cup buttermilk
- 1 1/2 cups apples, granny smith diced
- 1/2 cup raisins, seedless
- 1 x brown sugar
- Sift together flour, sugar, baking soda and spices.
- In mixer bowl put egg, egg whites, vanilla, apple sauce and milk.
- Mix with electric mixer.
- Gradually add dry ingredients, blending well.
- Stir in apples and raisins by hand.
- Pour batter into 8x8 inch pan that has been sprayed with Pam.
- Sprinkle with brown sugar.
- Bake in preheated 350F (180C).
- oven for about 50 minutes.
- Freezes well.
