Cioppino
- 1 lb. fresh or frozen fish fillets
- 3/4 c. chopped green onion
- 1/2 c. chopped onions
- 1 clove garlic, minced
- 1 Tbsp. cooking oil
- 1 (16 oz.) can tomatoes, cut up
- 1 (16 oz.) can tomato sauce
- 1/2 c. red wine
- 3 Tbsp. snipped parsley
- 1/4 tsp. oregano
- 1/4 tsp. basil
- 1/8 tsp. salt
- 1 (6 1/2 oz.) can minced clams
- 1 (4 1/2 oz.) can shrimp, rinsed and drained
- dash of black pepper
- Thaw fish if frozen.
- Cut fish into 1-inch pieces.
- In a large saucepan, cook green onion, onion and garlic in hot oil until tender.
- Add tomatoes, tomato sauce, wine, parsley, oregano, basil, salt and pepper.
- Bring to boiling, then reduce heat. Cover and simmer 20 minutes.
- Add fish, shrimp and undrained clams.
- Bring just to boiling, then reduce heat.
- Cover and simmer 5 to 7 minutes or until fish flakes easily with a fork.
- This stew is delicious on its own or over rice.
- Serve with salad and warm bread.
