Easy Spinach Souffle Recipe
- 1 (16 ounce.) container Cottage cheese (fat-free optional)
- 3 Large eggs, well beaten
- 1/4 c. butter (less is optional)
- 1/4 (16 ounce.) Cheddar cheese (less is optional)
- 1 (10 ounce.) pkg. frzn minced spinach, thawed & liquid removed
- 3 tbsp. flour
- 1/4 c. Parmesan cheese
- Put cottage cheese in large mixing bowl.
- Add in beaten Large eggs and mix thoroughly.
- Cut cheese and butter into coarse pcs and add in to Cottage cheese mix.
- Mix well.
- Add in spinach and flour mixing thoroughly.
- Pour into 1 1/2 qt casserole (greased).
- Sprinkle Parmesan cheese on top.
- Bake 1 hour at 350 degrees.
