Grandpa's Helping You Be Regular- Bran Muffins
- 1 cup flour (recommend whole wheat)
- 2 teaspoons baking powder
- 12 teaspoon baking soda
- 12 teaspoon ground cinnamon
- 2 cups 100% all-bran cereal
- 1 14 cups 2% milk
- 13 cup firmly packed brown sugar
- 1 egg
- 12 cup applesauce
- 12 cup flax seed (optional)
- 12 cup nuts (optional)
- 1 cup raisins (optional, but highly recommended)
- 12 cup fresh blueberries (optional)
- Preheat oven to 400F.
- Mix flour, baking powder, baking soda, and cinnamon in a large bowl.
- Mix cereal, milk, and sugar in another bowl; let stand for 5 minutes.
- Stir in egg and applesauce to the cereal mixture.
- Add to flour mixture; stir just until moist (Batter will be lumpy).
- Add any optional ingredients in, such as flax, nuts, blueberries, or raisins.
- Spoon batter into muffin pan sprayed with nonstick spray; fill each cup 2/3 full.
- Bake 18 to 20 minutes.
- Serve warm or you can zap in microwave for 10 seconds before eating if you make ahead of time.
- They will taste as fresh as just coming from the oven!
