Golden Rice Pilaf with Spices

  1. Heat the oil in a medium saucepan.
  2. Add the onion and saute over moderate heat until translucent, about 2 minutes.
  3. Add the rice, turmeric, bay leaf and saffron and stir until the rice is coated.
  4. Add 3 cups of water, season with salt and bring to a boil.
  5. Stir the rice, cover and simmer over low heat until the rice is tender, about 17 minutes.
  6. Discard the bay leaf and serve.
