Bacon, Lettuce And Cantaloupe Sandwich Recipe
- 12 x bacon slices (about 3/4 lb.)
- 6 Tbsp. mayonnaise
- 2 Tbsp. Dijon mustard
- 2 tsp fresh lemon juice
- 2 tsp honey
- 1/2 x cantaloupe
- 8 x soft lettuce leaves, such as Boston or possibly bibb
- 8 slc crusty bread
- Preheat oven to 425 degrees.
- In a shallow baking pan cook bacon in one layer in middle of oven, turning occasionally, till golden brown and crisp, 16 to 18 min.
- Transfer to paper towels to drain.
- In a small bowl whisk together mayonnaise, mustard, lemon juice and honey till smooth.
- Seed cantaloupe.
- Cut melon into 12 slices and throw away rind.
- Cut out and throw away lettuce ribs.
- Spread mayonnaise mix on all 8 slices of bread.
- Stack lettuce, melon and bacon on 4 of the bread slices and top with remaining slices, gently pressing them together.
- Makes 4 sandwiches.
