Corn, Tomato and Avocado Salad
- 4 ears fresh corn, kernals removed
- 5 roma tomatoes, chopped
- 12 red onion, chopped fine
- 2 avocados, cubed
- 1 cup cilantro, chopped
- 8 ounces extra-sharp cheddar cheese, cubed
- 1 lime, juiced
- 1 teaspoon lime zest
- 3 tablespoons olive oil
- salt, to taste
- pepper, to taste
- cayenne pepper, to taste
- Combine all ingredients.
- Let set 15 to 20 minutes before serving.
