Edna's Banana-Date Loaf

  1. Sift together, 3 times, the dry ingredients
  2. Stir in sugar
  3. Mix in the chopped dates
  4. Add margarine, eggs & half the mashed bananas
  5. Stir to combine, then beat with electric beater at medium speed for 2 minutes
  6. Add milk, vanilla essence & remaining bananas
  7. Beat batter for another minute or so
  8. Turn into loaf tin, forming a concave meniscus to compensate for the rise in the middle
  9. Bake at 170C for 1 - 1 1/4 hours
  10. Let it stand in tin for 15 minutes before turning out onto cake rack & allowing to cool completely
