Edna's Banana-Date Loaf
- 2 cup Flour
- 3/4 cup Sugar
- 2 1/2 tsp Baking Powder
- 1/4 tsp Bicarbonate of Soda
- 1 tsp Ground Ginger
- 1/4 tsp Salt
- 2 Eggs
- 2 tbsp Milk
- 1 tsp Vanilla Essence
- 100 grams Margarine
- 2/3 cup Dates
- 1 cup Banana
- Sift together, 3 times, the dry ingredients
- Stir in sugar
- Mix in the chopped dates
- Add margarine, eggs & half the mashed bananas
- Stir to combine, then beat with electric beater at medium speed for 2 minutes
- Add milk, vanilla essence & remaining bananas
- Beat batter for another minute or so
- Turn into loaf tin, forming a concave meniscus to compensate for the rise in the middle
- Bake at 170C for 1 - 1 1/4 hours
- Let it stand in tin for 15 minutes before turning out onto cake rack & allowing to cool completely
