Make-Ahead Mexican Lunchbox Pinwheels
- 2 tablespoons fat-free vegetarian refried beans
- 10 inches flour tortillas
- 2 tablespoons diced tomatoes
- 2 tablespoons corn, cooked, drained and cooled
- 1 tablespoon sharp cheddar cheese
- 12 tablespoon cilantro, finely chopped
- 2 tablespoons avocados, mashed
- 1 tablespoon low-fat sour cream
- 2 tablespoons salsa
- Spread the refried beans on the tortilla.
- Sprinkle tomato, corn, cheese and cilantro onto refried beans.
- Mix avocado, sour cream and salsa.
- Spread on top.
- Roll up, chill for at least 2 hours.
- Slice into 1-inch pinwheels.
