Super Easy Honey Butter Cornbread

  1. Spray an 8x8 in.
  2. baking dish with nonstick cooking spray for cornbread.
  3. (Or 8 in.
  4. round dish, or even 8x4 in.
  5. loaf pan).
  6. Prepare and bake corn muffin mix according to package directions for "johnny cakes" (aka cornbread).
  7. Set timer for 15 minutes, this is 5 minutes less than minimum baking time.
  8. When 15 minutes is almost up place butter in a microwave safe bowl, melt in microwave for about 30 - 45 seconds.
  9. Stir in honey.
  10. Return mixture to microwave and continue heating in 20 second increments, stirring after each, until butter and honey are completely melted together (only took once for me).
  11. Consistency should be pretty thin.
  12. When 15 minute timer goes off, remove cornbread from oven and immediately poke several rows of holes in the top with a fork.
  13. Slowly drizzle honey butter all over the top, making sure plenty gets in the holes to let the sweet, buttery goodness settle inside.
  14. Also pour some around the edges so it gets to the bottom of the cornbread too.
  15. Return cornbread to oven for 5 - 10 minutes more to finish baking and caramelize the honey butter left coating the surface.
  16. Top should be a little darker than golden brown.
  17. Remove from oven, let sit about 5 minutes before serving.
  18. Cut, eat, enjoy.
