20 Minute Pasta Sauce Recipe

  1. In a 5- to 6-qt pan, combine minced onion, garlic, and extra virgin olive oil.
  2. Stir often over medium-high heat till onion is soft, about 5 min.
  3. While onion cooks, mince basil leaves.
  4. Add in to onion along with tomatoes with their juice, dry red wine, and warm chili flakes.
  5. Boil till reduced to 3 c., about 10 min, stirring often and breaking tomatoes into small pcs.
  6. Use warm.
  7. Makes 3 c. sauce; 4 servings.
  8. Comments: As the pasta business has grown, so has the number of sauces.
  9. Many prepared sauces are of good quality, and they're certainly fast and convenient.
  10. But I find it incredibly satisfying to make my own simple tomato sauce.
  11. It takes just 20 min - only slightly longer than heating a prepared sauce.
  12. I start with canned tomatoes and dress them up with whatever I have on hand.
  13. The results taste surprisingly fresh.
  14. Here's my favorite combination - delicious over anything from capellini to ravioli, and great in lasagna.
