20 Minute Pasta Sauce Recipe
- 1 x onion minced
- 6 x garlic cloves chopped
- 1 Tbsp. extra virgin olive oil
- 1/4 c. fresh basil leaves
- 1 can pear-shaped tomatoes - (28 ounce) with their juice
- 1/2 c. dry red wine
- 1/2 tsp warm chili flakes
- In a 5- to 6-qt pan, combine minced onion, garlic, and extra virgin olive oil.
- Stir often over medium-high heat till onion is soft, about 5 min.
- While onion cooks, mince basil leaves.
- Add in to onion along with tomatoes with their juice, dry red wine, and warm chili flakes.
- Boil till reduced to 3 c., about 10 min, stirring often and breaking tomatoes into small pcs.
- Use warm.
- Makes 3 c. sauce; 4 servings.
- Comments: As the pasta business has grown, so has the number of sauces.
- Many prepared sauces are of good quality, and they're certainly fast and convenient.
- But I find it incredibly satisfying to make my own simple tomato sauce.
- It takes just 20 min - only slightly longer than heating a prepared sauce.
- I start with canned tomatoes and dress them up with whatever I have on hand.
- The results taste surprisingly fresh.
- Here's my favorite combination - delicious over anything from capellini to ravioli, and great in lasagna.
