Chicken Curry in a Hurry

  1. Put the oil in a frying pan over a medium high heat.
  2. When hot, add the onions and raisins if using, sprinkle with salt and pepper, cook, stirring occasional, until translucent about 5 minutes.
  3. Turn the heat down to medium, sprinkle with half the curry powder and continue to cook a minute or two.
  4. Season the chicken with salt and pepper to taste and sprinkle it with the remaining curry powder.
  5. Move the onions to one side of the frying pan and add the chicken.
  6. Cook both side.
  7. Transfer to a plate.
  8. Add the sour cream and stir constantly over medium low heat until the mixture is nice and thick.
  9. Return the chicken to the frying pan and cook for a couple more minutes or until cooked through, turning once.
  10. Garnish with parsley.
  11. You can eat it with either rice, or pasta of your choice.
