Sweet Plantain Casserole
- 8 lg. very sweet plantains
- 4 lb. ground beef
- 1 sm. onion, diced
- 1 sm. green pepper, diced
- 3 cloves garlic, minced
- 2 tsp. sofrito
- 1/4 cup halved green olives
- 8 oz. tomato sauce
- Adobo for seasoning
- 3 egg whites, beaten
- 4 cups mozzerella cheese
- 1st Layer: Cut sweet plantains long and thin.
- Fry them until lightly brown.
- Fill bottom of your casserole dish and brush with egg whites.
- 2nd Layer: In frying pan, saute onion, green pepper, garlic, olives and in a small bit of oil until lightly brown.
- Add ground beef, sofrito and tomato sauce and fry until beef is browned.
- Lay a portion on top of the sweet plantains.
- 3rd Layer: Add one cup of mozzerella cheese for every layer.
- Repeat layers 2 more times and top it off with cheese.
- Put casserole in oven for 10 to 15 minutes on 350F.
- Serves up to 8 people.
