Chicken Sausage Tacos with Cilantro-Yogurt Sauce

  1. Start with your sauce.
  2. In a small food processor, blitz up the cilantro, yogurt and lime juice.
  3. Stick her in the fridge until youre ready to eat.
  4. Heat 1 tablespoon oil in a medium skillet.
  5. Add the sausages and cook until both sides are nice and browned, 4 minutes.
  6. Remove from the pan and set aside.
  7. Add a little bit of water to the pan to deglaze.
  8. Scrape up the browned bits from the bottom of the pan.
  9. Once the water has evaporated, add a little more oil and add the garlic.
  10. Bloom for 30 seconds.
  11. Add the tomatoes and spinach and cook until wilted, 2 minutes.
  12. Toss in a little pinch of salt and pepper.
  13. Stack two corn tortillas on top of each other and layer on some sausage, sauteed spinach and tomatoes.
  14. Drizzle with that fabulous cilantro-yogurt sauce and get on it, dude.
