Shrimp Supreme

  1. Cut shrimp in half lengthwise.
  2. Combine next 5 ingredients; mix well.
  3. Add shrimp and toss gently to coat.
  4. Let stand 15 minutes.
  5. Heat oil in a large skillet; add shrimp.
  6. Cook, stirring constantly, for 3 to 5 minutes (until shrimp turn pink).
  7. Remove shrimp and set aside.
  8. Drain drippings, reserving 2 tablespoons in skillet.
  9. Add onion, chopped red pepper and garlic to skillet. Saute until tender.
  10. Add zucchini and saute 2 minutes.
  11. Stir in shrimp, cooked rice and cashews (optional); cook over low heat, stirring constantly, until thoroughly heated.
  12. Yields 4 servings.
