Shrimp Supreme
- 1 lb. medium shrimp, peeled and deveined
- 1 Tbsp. plus 1 tsp. cornstarch
- 1/4 tsp. sugar
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 c. vegetable oil
- 1/2 c. chopped onion
- 1/4 c. chopped sweet red pepper or banana pepper
- 1 small clove garlic, minced
- 1 c. chopped, unpeeled zucchini
- 3 1/2 c. cooked Uncle Ben's rice
- 3/4 c. cashews (optional)
- Cut shrimp in half lengthwise.
- Combine next 5 ingredients; mix well.
- Add shrimp and toss gently to coat.
- Let stand 15 minutes.
- Heat oil in a large skillet; add shrimp.
- Cook, stirring constantly, for 3 to 5 minutes (until shrimp turn pink).
- Remove shrimp and set aside.
- Drain drippings, reserving 2 tablespoons in skillet.
- Add onion, chopped red pepper and garlic to skillet. Saute until tender.
- Add zucchini and saute 2 minutes.
- Stir in shrimp, cooked rice and cashews (optional); cook over low heat, stirring constantly, until thoroughly heated.
- Yields 4 servings.
