Caesar Penne and Asparagus Salad
- 350g penne pasta
- 1 tablespoon oil
- 200g short rindless bacon rashers Rite Aid 2 For $7.00 thru 02/06
- 2 bunches asparagus, trimmed and cut into 4cm lengths
- 1 cup KRAFT FREE* Caesar Dressing
- 6 hardboiled eggs, peeled and sliced
- 2 tablespoons snipped chives
- Cook pasta in boiling water until al dente; drain.
- Heat 1 teaspoon of oil in a large frying pan and cook bacon until browned and crisp.
- Set aside on paper towel to drain.
- Add remaining oil to pan and cook asparagus over medium heat until just tender.
- Toss the drained pasta with the dressing, egg, chives and asparagus until well coated.
- Slice bacon and serve over warm pasta salad.
- Serve immediately.
