Dijon Mustard Dressing
- 1 12 teaspoons salt
- 1 12 teaspoons sugar
- 1 teaspoon black pepper
- 14 teaspoon dried tarragon
- 1 tablespoon parsley, chopped
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- 12 cup olive oil
- 14 cup white wine vinegar
- 5 tablespoons heavy cream
- 2 eggs, beaten
- In a 1 quart measure, whisk together salt, sugar, pepper, tarragon, parsley, mustard, garlic, oil, vinegar, and cream.
- Microwave on HIGH for 1 1/2 to 2 minutes.
- Beat 2 to 3 tablespoons of hot oil mixture into beaten eggs, beating constantly.
- Microwave at 50% power for 2 minutes, until thickened, stirring once, during cooking.
- Chill dressing.
