Spicy Buffalo Chicken Meatballs

  1. Preheat the oven to 400 F
  2. In a large mixing bowl, combine ground chicken, egg, wing sauce, bread crumbs and cheese.
  3. Using your hands, mix all ingredients until well combined.
  4. Using a food scale, weigh the meatball mixture into 1.5-ounce portions (or just eyeball itthey should be about the size of a golf ball).
  5. Roll into a ball and place each meatball into a hole in a mini muffin tin.
  6. Bake for 20 minutes or until golden and cooked through.
  7. Then remove them from the oven and let them cool.
  8. Use immediately or freeze for future use.
