Spicy Buffalo Chicken Meatballs
- 1 pound Ground Chicken
- 1 whole Egg
- 1/4 cups Buffalo Wing Sauce
- 1/2 cups Whole Wheat Panko Breadcrumbs
- 1/4 cups Blue Cheese, Crumbled
- Preheat the oven to 400 F
- In a large mixing bowl, combine ground chicken, egg, wing sauce, bread crumbs and cheese.
- Using your hands, mix all ingredients until well combined.
- Using a food scale, weigh the meatball mixture into 1.5-ounce portions (or just eyeball itthey should be about the size of a golf ball).
- Roll into a ball and place each meatball into a hole in a mini muffin tin.
- Bake for 20 minutes or until golden and cooked through.
- Then remove them from the oven and let them cool.
- Use immediately or freeze for future use.
