Salat Schussel (Salad Bowl) Recipe
- 1/2 med. cucumber, sliced
- 3 tomatoes, cut in wedges
- 1 grapefruit, peeled and sectioned
- 2 avocados, seeded, peeled and thinly sliced
- 1 green pepper, thinly sliced
- 4 fresh peaches, peeled, pitted and thinly sliced
- 1 head Boston lettuce, torn bite size
- 1/3 c. plain yogurt
- 1/3 c. lowfat sour cream
- 1/3 c. salad oil
- 1/4 c. minced onion
- 2 tbsp. orange juice
- 2 tbsp. white wine vinegar
- 1 egg yolk
- 1 tbsp. lemon juice
- 1 tbsp. sugar
- 1 teaspoon salt
- 1/2 teaspoon dry mustard
- Arrange vegetables and fruit in large salad bowl.
- Combine remaining ingredients except lettuce; mix very thoroughly.
- Pour sufficient dressing over fruit and vegetables to moisten.
- Refrigerate1 hour.
- Just before serving, add in lettuce.
- Toss with salad.
- Makes 8 to 10 servings.
